I was considering getting the M6 with 32GB which would come down to €2769 here in the Netherlands. But now I have an offer for a used M2 Max 64GB for €1900.

Which one should I pick?

You should be able to do some local LLM models on the M2 Max 64gb (Qwen 3.8 27b would be a strong model). I might go for that one.
